Would this have a bottleneck together? (CPU and GPU)

it is a nice match for 1080p@60-100Hz and 1440p monitors
for 1080p@120+Hz an i7 would be better, but not necessary.

Do you already have that CPU? If buying that CPU new then I wouldn't use it, unless you're grabbed it cheap used. That chip is about 4 years old. It won't bottleneck, but it and its chipset will show its age quickly.
