Would this setup be the best for upgradability?

I'm going to putting my first watercooling setup into a Fractal Define S with plans to overclock and liquid cool the cup and one or two graphics cards. The case supports 3x top 120/140 fans, 1x back 120/140 fan, 3x front 120/140 fans, and 1x bottom 120/140 fan. Has no optical drive bays and hard drives are mounted behind the motherboard tray, so there is plenty of room for any setup.

I'm going to start out with just watercooing the cpu and am wondering if i can get by with an XSPC AX140 or if i should go with a 280.

I'm assuming I won't be able fit my i5 and the possible two gtx 1080's all on a triple fan radiator, so i will eventually be adding a second 360 for the graphics cards that will be installed most likely in the front fan slots of the case.

Is this a decent setup or would there be a more logical way to go about things? I'd hate to waste a couple hundred bucks buying components i don't need.

I'd say the best bet is to top mount a radiator where it supports those 3 fans, you can probably get away with your i5 and a modest overclock with one 1080, make sure you're pulling in air from outside with the radiator though, and try to go for faster fans and you should be fine, SLI with the 1080 is a bit overkill unless you're doing everything at 4k on a 144hz monitor because it should run everything on max at 60+ fps, but if you do decide to go SLI you'd need a separate radiator, but in the short yes that's an awesome setup for upgrading.
