Let’s suppose as an example to run on a series x a 60+ fps title such as rainbow six or many more, it will run at “x fps” fps in “high screen resolution” (such as 2k,4K) resolution.

Will set a lower res (such as 1080p,720p) in Xbox’s settings increase the frame rate to “morefps ”fps?
This is a trick that obviously works on pc but what about consoles?

(60+ means that the game frame rate is unlocked to a max of 120fps and not locked at 60fps)

Well, unless your game is laggy, don't lower your settings. The Series X is optimized for gaming, so 60 FPS is like 75 FPS on a PC.

Consoles and their games don't really act the same way as the PCs that just try to max out the FPS with any game and is only limited by the PC hardware. Console games work along with the hardware to keep the FPS more stable, so the game itself has to support going up to 120 fps at even lower frames. Think of it as a rev or speed limiter in a car, you can add more HP to a car but if there is a speed limiter on it, it will only get to the set limit. In consoles if the game supports 120 it will run at 120 at the stated resolution. Lowering the console resolution will not change how the game engine works. If the game is coded to run at 60fps at 1080, the game renders at 1080 at 60fps and the console resolution does not do anything to change that internal speed. If you set the game to use a higher FPS and the game supports it, you are telling the game "I want 120 fps, do what you do to get me that". Again that is in the game engine.
