Soul gems are used to recharge enchanted weapons. Each time an enchanted weapon is used, it will deplete the charge of it. This includes staffs charged with spells as well, so even as a mage you are going to need to use these if you rely on staff usage at all.
Step 1)Fill the soul gem with the correct size of soul.

Step 2)Access the in game menu and select the weapon you want to recharge.
Once you have a soul gem filled with a soul, go to your weapons and select the one that needs to be charged. You'll see along the bottom that it will prompt you with which button to press to charge it. Press that button. Alternatively, if you are looking to enchant a weapon you would go to a enchanting table and choose the weapon and enchantment desired.
Step 3)Select the soul gem you want to use.
Select the gem you want to use to recharge this weapon, and select it. This won't just empty the gem, but use it up completely. The larger the soul gem and the captured soul, the more the weapon will recharge.
That's all there is to recharging those enchanted weapons. The higher your enchanting level when you enchant them, the more of a charge they can hold as well, so try to enchant new weapons as your own enchanting level increases.
