SOLVED! I unplugged my 2 side monitors and changed resolution to 2560x1440 for the one monitor and the update went through with no issue. Very very odd as I have done updates with my triples hooked up previously.

I manually set it to DDR4 3600 and 1.35v. And it locks up in BIOS. It will boot to windows and run fine. Just the BIOS locks up. Mouse disappears in BIOS and I have no keyboard function and the screen is locked. If I restore BIOS defaults, everything works as needed.
