I have fixed my issue by changing the thermal paste on my GPU

UPDATE: Checked the thermal paste on my GPU and it was non-existent. Seems like my GPU was throttling itself to stay at 70C. Reapplied thermal paste and now temps get to 81C, but there is no more crashing
