Typically if you got into Windows, something with the software wouldn't break and prevent it from getting back in. Check connectors, etc. Did you plug the display cable into the Mobo by chance, instead of the GPU?

5600 is a pretty mild CPU, you shouldn't see temps that high. Are you overclocking? Repaste and make sure the cooler is mounted correctly. A good alternative is the peerless assassin.

The B550 TUF, Strix, Tomahawk or Gaming Plus are all good boards with a reasonable price / feature set.

Random crashes are hard to diagnose. You could RMA your power supply and see if that fixes it. Worst case, a no cost way to eliminate power supply as the problem area.

AMD 5900x is a good choice for your budget.

BIOS are a funny thing. There is an explicit warning from Asrock: "If the system is working properly, we recommend keeping the current BIOS / firmware. " You may try 1.80, can't hurt.
