The only bad part, I can ONLY boot from the NVMe. I've tried changing the bcdedit to the ssd, but in BIOS, it's not reflecting, so I guess I'm stuck with only installing to an NVMe.

So I just tried throwing in a Nvidia GeForce 9800GT, didn't work, but I threw in a GeForce 8800 Ultra and it came on, and said the VGA was not supported by the UEFI driver. At least it's progress! Thanks rgd1101!

It's actually for a family relative who has a game that doesn't "run right" as he put it (very non tech savvy) in Windows 7, as the game originated in Windows XP. So he was adamant on getting a Windows XP machine. I'll try the chipset drivers, but didn't think that would assist with the audio.
