So I got an 1000W CoolerMaster 80+ Gold PSU instead, just finished playing witcher 3 for like 2.5 hours, no issues whatsoever. The problem seems to have been the PSU indeed. Thank you!

Maybe it's stupid, but just a question that came to my mind: Also not long ago I set my fan speeds higher so the GPU can remain at around 70c instead of, like 80+. Could that increase the power draw even just a tiny bit so it takes the PSU over the edge?

Definitely not going to overclock anything. I will get a stronger PSU to see if the problem ceases. By the way the GPU is a Gigabyte OC RX 5700XT. Thanks a lot!
