Hello,
I have a i5 661 processor and 2 ddr1600 rams my core temp is 87c.
I read from intel list that I should be use ddr1333 rams
Would this make a different, 1600 or 1333

No. It won't make a significant difference.

Your core temperature is way too high. reseat the heatsink with new compound and make sure you have proper airflow.
