I'm building a new gaming rig meant for overclocking. My only question...

I play alot of 1st person shooters. How much of a performance increase would 2 gigs give me over 4? I'm going to be running DDR2 800 ram OCd to 1066 MHz.

Without question 4gb of ram would increase fps. It shouldn't even be a question at this point with ram being decently priced. You can get mushkin and gskill 4gb kits for around $65 with MIRs on newegg. Personally if the extra money isn't an issue I would just do it.
Edit: FYI. I don't know if you know this or not so forgive me if this isn't news. Depending on memory for all your components a 32-bit OS will address roughly 3.5gb if you've added 4gb of ram. So don't think there's an problem with the memory. A 64-bit OS will address the full 4gb but the performance gain of the extra .5 gbs is debated.

I guess I'll just do 2 gigs. I actually looked at Corsair's page on Newegg regarding 2 vs. 4 gigs and performance in Crysis didn't increase at all with 4 gigs over 2.

By the way I'm going Mushkin

I would definitely go with 4gb.

The tests are likely not that reliable, unless you plan on not having AV Software install or any other number of programs that could be memory resident and take up RAM.

For $20-$25, I just don't see the point of not doing this.

Definitely get 4gb. No matter what the benchmarks say, you'll notice less lag and faster loading times in just about every game. The games won't have to access the hard drive as much while playing, so it'll play more smoothly.
