256GB vs 500GB SSD for Editing & Gaming?

Greetings!

I'll be finally getting an SSD next month and I've been looking at the Samsung 850 Evo 500GB, at 150€ ($185). I have, however, been wondering if 256GB would be enough, considering it'd cost 50 bucks less. I will use it to install Windows 10, Adobe software such as Photoshop and Premiere (in which I'll be rendering videos at 1080p60 into the SSD, though I will move them into a 1TB HDD afterwards), along with Steam and Battle.net. Some games I play at the moment are Overwatch, VRChat, Modded Skyrim and, although rarely, League of Legends and Elder Scrolls Online. Besides these I also like to occasionally hunt for games at GameJolt and get them too, though those aren't usually very heavy files.

Would the 256GB version be enough or should I consider 500GB instead?

If in the UK the price of the Crucial MX500 SSD of the same size is competitive with the Samsung 850 EVO, then you might consider the MX500. Same time-length of warranty, but greater write-durability warranty.

You can't go wrong with either one, though.

Thank you for all your replies! I do like how the 860 sounds, however, I don't think I can fit it into my budget. I will definitely look into it though. It's also settled size wise and I'll be going for the 500GB SSD. As for the Crucial MX500, from what I saw it actually is 10 bucks cheaper than the 850 Evo, however it also seems to be a bit slower. I might go for the 850 in this case also because it's easier to get than the Crucial. Thanks for the help, everyone!
