Accessing HD data

Hello,
I have a ASUS K8U-X motherboard on wiich are connected two ATA hard Disks and two SATA hard disks
The AMI Bios recognizes the ATA hard drive as primary and secondary hard drives and boots appropriately.
The two SATA drives are not recognized but are listed in boot priority devices.
The Boot setup utility does offer the option of setting up a RAID array using the two SATA hard drives.
I know next to nothing about RAID arrays. But do believe that if it is used then data on the SATA hard drives will be lost.
What I would like to accomplish is to gain access to the files within the drive and perhaps move them to one of the internal hard drives or a external USB hard drives.
Am I wrong about RAID arrays?
Is there a way to gain access to the data on the SATA hard drivs?
