EVGA NVIDIA GeForce GTX 580.
700W PSU.

Upgrading from my old Core 2 Quad Q8300
Gigabyte P41T-G3P
4GB DDR3 RAM
EVGA GTX 580 (The same as the one listed above.)
And my 700W PSU.

Gaming, editing; serious multi-tasking.

I would try to get regular speed RAM. (1600mhz not 1333)

Also, what brand is the PSU?

I would do this all differently but since you are being gifted the parts and don't have control I won't get into it.

I always thought if the PSU is of a certain wattage, it is fine assuming it isn't some crappy brand.

Yeah, 500w is plenty for any modern single card system and Corsair is a reputable brand so you should be fine.

I would recommend getting an i7 3770k (not almost 2 years old already like the 2700k) and 1600mhz RAM.
