Question BIOS resetting after upgrading my GPU and PSU

Hi all, last weekend I upgraded my GPU from a 1070 (Gigabyte Wind Force OC) to 6800xt (PowerColor Red Dragon) and my PSU from 550W to 750W. I also bought myself an M.2 (Crucial P3 1TB M.2-2280 PCIe 3.0 x4) drive as I required more storage and hadn't used either slot on my motherboard (Gigabyte B450 AORUS Elite).

After installing these new parts I found (and am still suffering from) the following problems:
1. The PC won't turn on unless I turn the PSU off wait 10 seconds and turn it back on again
2. The BIOS gets reset every time the computer boots and I cannot get back to Windows (10) after changing the settings so I'm forced to reboot and thus reset the BIOS
3. The BIOS is detecting the CPU as -55 degrees C but software is saying 95 when idle! So the CPU fan isn't running at full speed.
4. The M.2 isn't being detected by BIOS or software

I've tried the following but nothing changed:
1. Changing plug sockets on my extension lead
1. Turning everything off on the extension lead apart from the PC
2. Flashed my BIOS to the latest version
2. Replaced the CMOS battery (The system clock stopped resetting itself, I only realised this is a CMOS error yesterday, it's been happening on and off for around 1/2 weeks)
4. Changing M.2 slots and shuffling the SATA connections around accordingly (although I'm not certain I did it right for slot 2 originally)

The current work arounds I have:
3. Use FanControl to manage my CPU and system fans instead of leaving it to the BIOS (Still idling at around 55 to 65, probably just need to clean the fan as it's been a long time)

I believe that the BIOS not being able to save changes means I can't detect the M.2 and it's also making my RAM run with XMP disabled as well as taking forever to BOOT because Fast Boot is disabled and it's first boot attempt is from the wrong drive.

I believe that all the issues are likely linked together and I've come here for help and advice. I'm tempted to just buy a new motherboard at this point as I can't think of anything else that could be causing my issues.

After further experimenting, the BIOS only resets when I turn on the XMP profile so I'm assuming the RAM is faulty and needs reseating/changing. However, my BIOS still isn't detecting my M.2, is it possible that the faulty RAM is causing issues detecting it?
