Break non-OS mirror in Win 10

I have an M.2 as OS drive. I have (2) identical SSD running Raid 1 through Win 10 storage management. The mirror is absolutely useless to me. All I want to do is break the mirror and delete one of the drives so I can use it as a separate storage.

Can someone please give me a mirror breaking for dummies tutorial on how to do this? I have considered:
1) unplugging one of the drives
2) deleting the one still plugged in and renaming it
3) plug the other drive back in and assume I still have everything just without a mirror
