Building a primarily gaming PC to game with my pre-teen kiddos. I have a 55" LG CX OLED - hoping to game at 4k @ 120 hz (LG OLED 2.1 HDMI subsampling issues aside).

Have some cash saved up for this, don't mind overspending on some parts ( I refuse to pay over MSRP) without being too wasteful.

I already have the 10900k but could easily return. I do not have a video card yet 🙁

Yep, finding 3080 stock will probably be tough for a while...

Have you considered Ryzen for the CPU? Especially if you can wait a little for the announcement of the next gen, prices on the current ones will come down, so choose a 3rd or 4th gen you will have better bang for buck. And you could then go with either Samsung Evo 980 PCI 4 SSDs or the Sabrent Rocket 4 Plus ones, which should actually be faster than the Samsung. Possible faster game loading times, etc.

Finally, your PSU wattage may be just a little overboard unless you're considering SLI. PSUs perform less efficiently when under low such low load. Of course, you might not care about overpaying a little for electricity.

You may not be able to game at full 4k and read titles and text depending on distance from viewer.
16GB is more than adequate for AAA gaming. No need for 32GB.
You may also have heat issues with a reference GPU card. Get a none reference with triple fans and add larger 140mm extraction fans if you can to improve case air flow.
PSU is Overkill but you've gone for the best there is. Wise move.
Apart from that you have a pretty beefy system.

RTX3090 benchmarks should out in Few Hours. If it ends up being 30%+ in Performance over RTX3080 I recommend purchasing RTX3090. Specially for Gaming at 4K and that to on a Monitor like LG CX you wouldn't want to go down on settings. So wait for the Reviews and if it is 30%+ better then no questions asked and no Comparison of Price to Performance Ratio as that 30%+ can take you from having 50fps to 65+ fps at 4K. It definitely be worth the expenditure over time. Specially when DLSS is going to evolve further with Updates Rolling in over time.

Note that I added a buch of matching branded Fractal fans if you want to RGB it up. I added 3 140s for the front of the case and a single for the rear exhaust. I added 3 120s for the bottom of the radiator in the push position and you can add the black ones that came with the Arctic 360mm rad as pull on the top. The CM 500p is a really nice case IMO. Of course all those are basically aesthetics. If you dont care for the RGB you can just use the default fans and save 165 dollars.
