Seasonic is one of the leading PSU manufacturers and one of the best quality wise. Your PSU choice is very good.

The RAM is nothing special. Any brand - GeiL, Corsair, Kingston, AData, Mushkin, G.SKILL is going to do the same job. It is more about price/appearance and availability.
All of those run on both brands GPUs. I would be inclined to recommend nVidia though. Lumion tends to prefer CUDA and Cycles (Blender) is more CUDA optimized (stated on the Cycles forum). Though to be honest - a 390 for the same price as the 970 comes with double the vRAM so that can make or break your project. I can't really advise you further, than for you to assess your own needs.

I am using mainly VRay on the CPU side. VRay RT I use for previs only and rarely and RT as most GPU renders does prefer CUDA simply because CUDA is older and more mature than OpenCL. But, in brute force wise, AMD has the upper hand, so even in situations with less optimization going on, the brute compute of an AMD video card combined with more vRAM can come at top.

There are just not enough benches for me to give a definitive answer. The GTX 970 is the safer bet. A R9 390 might prove a better future investment.
