Building new rig, 500$ gpu budget

Hi all.

SO I have 500$ to spend on the gpu of my system. I want to know what is the best plan. I could either

A) Get one GTX 580, wait until price drops, then get a 2nd for SLI

OR

B) SLI 2 560ti GTX, then upgrade to GTX 600 series when they release.

The rest of my system specs will be

i5 2500k
8gb ram
1tb HDD
115GB SSD

And I will be gaming on a 1920 x 1080 monitor(not 1080p)

Thoughts?

I guess SLI would be better plus if one card dies you can still game
