case fans ???

How fans controls itself when temperatures go up?
board has only 2x4pin

it depends... a case fan will not support it, it is the hardware connected to it, some close loop aio supports it... they need a sensor without it they cannot be controlled like that... some mobos has a sensor... you just need to check if the mobo you like has it...
also you can buy a fan controller... some 5.25 fan controllers (like nzxt) have temperature sensors, you can do it manually or let the hardware control it...

what is the best NZXT Sentry 3 or Sentry 2 ?

sentry 3 supports more wattage per channel, if you have many (high end) fans you could use y splitters cable and being able to use the fans at its full power... and even connecting 3 fans per channel... plus the sentry 3 has 3 and 4 pin connectors... and temperature sensors... the price difference is not much, i would say the sentry 3
