Converting burned DVDs back to files

Hopefully someone can help.

Back in the day, I used DVD decrypter and DVD shrink to make copies of 100's of DVD movies. Now I have no use for those DVDs and want to actually convert back to files.

Any suggestion on the best way to do that? If Handbrake, what setting or formats would you suggest? They will be stored in a Synology ds218+ for Plex streaming.

So, I won't comment on any utilities that would directly violate extracting copyrighted movies (DMCA). That said however, if you've got generic home-made DVD videos (say, family video events, weddings etc) and wish to transcode them into file format, Handbrake is the most versatile and easy to use tool for that scenario.
