I was thinking of old gen i5 (ddr3 systems) for gaming (PUBG, CSGO, Dota 2, etc.), would any i5 from 2nd gen to the latest 4th gen handle this game? And would it bottleneck my GTX 1050 in any way? I currently have a 1x8 ram stick. Was either planning on replacing it for a 2x4 or should I just get another 8gb stick and make it 16gb?

i5-3470 or 3570 would be good choice for your GTX 1050, but motherboards are a ah heck to find for the obsolete platforms (4th-gen and below). If you can't find a decent motherboard, I'd suggest selling your 8GB DDR3 and going with a new budget system; Pentium Gold G5400 + H310 mobo + 2x4GB DDR4.
