Do composite cables carry surround sound signals?

As stated, I am setting up a home theatre system and unfortunately limited to component cable. These are mono im guessing? I dont have any other connections to the TV other than S-Video and component. I was just curious if RCA cables carried all signals.

Composite and S-Video do not carry any audio. Composite consists of RED/GRN/BLU cables and only carries video signals. It maybe slightly confusing as composite cables and the audio cables both have RCA plugs on them. You need to hook up the audio RCA cables (typically either RED/YLW or RED/WHT) to get audio from whatever to your TV. HDMI is the only multi (video/audio) connector that I know of for consumer electronics.

the red and white rca cables carry stero sound, not mono... ie left and right channels seperately for each cable.

Yeah WTS ^^^
Tho many hifi's can sperate stereo into 5.1
Its not perfect but it will play the correct sounds thru the correct speakers.
Its always better to use a 5.1 coax or better digital (single coax or optical)
