I have a MSI B350M PRO-VDH (MS-7A38) motherboard but can't find much online about it supporting secure boot or windows 11

It will depend on what CPU you have. If you have at least a 2xxx Ryzen (2600X for example) then you could use that motherboard with Windows 11.
MSI has Windows 11 drivers on the downloads for that motherboard.
