EVGA 780SC 3GB for triple monitor

I just purchased a second 780 SC so that I can have two in SLI because I game on three 1080 monitors at 5760x1080 and I don't want to upgrade for 3 or 4 years. Is the 3GB of VRAM enough or should I do the EVGA step up program and go to the 6GB 780SC? So far I haven't had any issues with even a single 780 on surround but in the future I don't want to need 4GB of VRAM minimum for High Settings like in Watchdogs or Shadow of Mordor.

I have 2 of the same cards in SLI. And I can tell you, the only thing stopping me from ramping everything up in SoM is the minimum requirement for 4gb for ultra. Which I have 3gb so it's pretty much impossible. It'll be fine to run any games. But like you said, games like SoM and watchdogs, which I have played in forever because it runs like crap. They need alot of VRAM. So if you dont want to run into that bottleneck later on, I'd do the 6gb versions. I'm perfectly fine just having to put it on very high.. But then that's me. It's really up to you!
