Question Existing/working PC started shutting down every ~10 min since new OS install?

I have a PC that was running fine (since 2020) until I decided to format the PC and so I could install the OS onto a bigger drive.

PC:
Ryzen 7 5700x (With AIO)
ASUS X570
RTX 3060TI (Connected to 2 displays via HDMI and DP)
32GB RAM (2 sticks)
SSD 1 - 256 GB (This is where the OS was originally)
SSD 2 - 1 TB (New OS drive)
HDD 1 - 1 TB
Nvme 1 - 512 GB
Nvme 2 - 1TB

After the fresh install of Windows, I get to the point where I can access Windows desktop and as I was installing updates, the PC seemingly shuts down -- no display, but KB/mouse lights are on. I hard restart and try to install drivers again, same issue.

I then tried removing drives one by one, attempting to see if it does anything, until only SSD 2 remained -- same issue. I remove SSD 2 and try to install the OS on the original SSD 1, same issue. I've also tried remounting the CMOS, reseating RAM, same issue.

Issue occurs between 5-10 minutes of me doing anything on the machine, regardless if I am on the Windows Desktop or idle in the F2 setup screen. Temps based on the F2 setup screen are around 40-50c for the chipset.

I'm not so sure which other parts I need to try to eliminate next, or if there is a BIOS setting I need to tweak. Any ideas? I'm absolutely baffled as to why an otherwise functional PC would start behaving this way after an OS reinstall.
