Question File Transfer Software Suggestions

Good morning. I was wondering if I could get some suggestions on the best software to migrate specific software / settings to a new hard drive? In the past, I would just use EaseUS to copy everything over, but this time I would like to be able to select what I want to move instead of a 100% move. For example, If I wanted to just move over my OS, Photoshop and the settings, specific folders, etc. Looks like most software that I find just gives the ability to move everything. Maybe I'm overthinking it.

You can't pick and choose during a transfer like this.

Cloning is pretty much all or nothing.
 
And you also can't split out "just the OS".

You can move just the OS. I've been doing that with the EaseUS Migrate tool for years. You basically have 2 options with their software. Move just the OS or move everything. Was just seeing if there was another software that can do the in-between.
