I have put this together to mainly play Call of Duty and for casual amateur video editing. Getting away from the consoles and onto the PCs.
Any suggestions would be greatly appreciated. Panicking at spending this much

I would not recommend purchasing a 5700XT at this time. Nvidia has launched new GPUs, AMD is following next month.

RTX3070 would be more fitting, but doesn't release until mid-October. Worth waiting for, about twice as powerful as the 5700XT

Don't spend money on an overclock, you can do it yourself with minimal effort by following a few online guides. Pro wiring, another thing you can do yourself with some quick video tutorials about cable management.

Probably buy your own monitor, maybe not that exact model, but there are plenty similar ASUS, Acer, Aorus, etc 240hz panels out there. Also 27" 1080p isn't ideal. 24" 1080p has decent pixel density. You'll also want real estate for video editing, look at 1440p 144hz displays. Or maybe a secondary cheap 1440p or 4K panel.

Generally looking at 15-20% upsell over what you could do yourself. Their advantage right now might be heavily on the PSU price, always bulk pricing on the OS (which they pocket)

Hmm, they might actually not be a bad deal right now. They are certainly pricing their fans low, about what you would pair for a pair of them. They appear to be the only legitimate place to buy that particular monitor from, no idea why the only places selling it want $475, plenty of comparable 24" models that are the same/better.

Again, not a true recommendation, just price comparison. Certainly not a good investment in terms of GPU.

RTX3070 should be $500-550 depending on the model. AMDs will likely fall in that range as well, performance remains to be seen. (RTX3080 is out, and you can do apples to apples comparisons to see what the performance difference is likely to be.)
