Hello everyone. I am currently wondering the percentages that its going to bottleneck my cpu from the full performance and how much % gaming performance is it than a 970.

Damage?
No.

You will be fine until you change CPU, you can't damage anything, basically you just can't use GTX 1080 max power as CPU is weak but you can't damage anything so no worries :)
Your GPU is going to be bottlenecked (limited) not your CPU. A non-limited (bottlenecked) gtx 1080 is around 45-85% better than a gtx 970 in terms of fps:

You can see that on the AMD system, gpu usage constantly drops to sth around 70%, almost never reaching 99%-100%. Up to almost 42% reductiion in fps in GTA V (which is very CPU intensive).

CPU intensive games are going to limit your GPU especially at 1080p (much less at higher resolutions since the fps will be lower). I can't say by how much the fps will reduce, really depends entirely on the specific game and settings. In your place I would wait and upgrade the entire pc when Nvidia volta (gtx 2070 & 2080) come out.
