GTX 1080 displaying 160.2 GB/s, Why?

Shouldnt the GTX 1080 deliver 320 GB/s, its running at PCIE 2.0 x16. Am i hitting the bandwidth limit between my motherboard and Graphics card? I have Two GTX 1080's they arent SLI'd yet cause im still waiting on the HB bridge to arrive. I also have an I7 3930k along with Asrock x79 LGA 2011. My second card runs at PCIE 2.0 x8

The verison of gpu z you're using doesn't have gtx 1080 support. Use the newest verison https://www.techpowerup.com/downloads/2794/techpowerup-gpu-z-v1-11-0
