Only a single monitor, likely the Overlord Tempest or a Qnix. Will 2x SLI 780 Ti's run well at ultra settings?

I should damn hope so.
I got a pretty low end GPU (Radeon 6670 planning on upgrading) and if that can play most games at average 30fps at 1080p High settings I don't think you'll have a problem.

(I'm new here)

There's a huge difference between 1080p and 1440p @ 120Hz.

Will even a single 780 Ti play most games efficiently on ultra at 1440p and 120Hz?

Don't quote me on this but I think one card should be sufficient for you to play at 1440p at a respectable framerate.

I think a single GTX780ti will be all you need.
Of course, it depends on the game and other things.
I have no problem at 2560 x 1600 with a single GTX780.

One advantage of higher resolution monitors is that you do not need to be so agressive with AA.

New demanding games won't allow you to get near 120 FPS, but indie and older games will at times, with a single 780 ti. You may also learn that it is impossible to get enough GPU power to get 120 FPS in a lot of games, indie, older or new. This is because some games are CPU bound, even with the fasted CPU's there are.

You may find 780 SLI would be a better compromise, for that 1440p 120hz monitor.

Wow I didn't know there were 120Hz 1440p IPS panels. It's actually an overclocked panel.

Anyway 780 Ti SLI is probably your best bet to approach/hit 120fps at that resolution. If you got money to burn why not get the new Asus PG278Q which is a proper (but TN) 120Hz 1440p monitor, and even has Gsync to get rid of screen tearing.

Also note the pixel density of 1440p in 27" is very high and you can get very good image quality with lower AA settings, which makes it a little easier getting to ~120fps.

No thanks.

Probably the most graphically demanding game I'll play is Battlefield 4, which, according to my research, averages around 60-90 FPS with SLI (1440p @ 120Hz). I think I'll just go with SLI, or wait and see what Nvidia has in store with the new Maxwell cards.

Would a single gtx 780 ti, listed below, be enough to support 2 1440p monitors? I am thinking on getting 2 IPS 1440p@60hz. I will only used one for gaming, the other will be used for internet browsing/general work during and after gaming.
