HDD to SSD windows 8.1

I just bought a 256GB SSD to use as my main operating system drive so my question is this, if i install a fresh new copy of windows 8.1 to the SSD can i switch back to my old drive which also has windows 8.1 on it to get stuff off of it or to remember the stuff i need to re-get for the new drive (yes i know you can clone drive but i want a fresh install)

Is it as simple as unplugging the SSD for the old one and booting like normal? or do i need to also mess with the bios setting or maybe some more steps i should know about

disconnect the HDD and connect the SSD.

install Windows.

connect the HDD.

use the Boot Menu to boot from either of the drives.

so i can have both plugged in with windows installed on both and be able to pick my booting driver from bios?
