Question Help choosing our new server setup

I'm expanding my hosting setup to a second location in Salt Lake City and looking for advice on which server to put there.
This will be used for running KVM VPSs (mostly small to medium Linux VMs). I’m already running a server in another location with around 190 VMs, so I’m looking to replicate or improve on that setup.
 
Currently some older nodes are based on EPYC 7551P, the newer on EPYC 7C13, dual Crucial nvme ssd's.
Wanted to hear different experiences for high density virtualization cases.

Virtualization is always about RAM. You can oversubscribe CPU, but you can't oversubscribe RAM.
RAM is then a function of physical space, and price.
I am NEVER a fan of a single physical host. You have a single point of failure. I would look for two lower spec hosts so that if you have a hardware issue you have only lost 1/2 your capacity.
