Build Advice Help for new gaming PC build (VR)

Hi all,

I decided to upgrade my config since it's from 2017 (except my GPU which is a 3080ti) and wanted to get some advice on a build.
I'm looking for a pretty high-end machine for gaming mostly and especially for flight sims (DCS, Flight Simulator 2020-2024) and I am looking for a good experience in VR, as well as some AAA titles and casual games. I don't really have a fixed budget but for now I would say around 1700-2000$ without the GPU.

I currently own a MSI RTX 3080ti Gaming X Trio 12G and will keep it for now until 5080 or 5090 gets released (at least that's my current plan).

I'm mostly considering to go with AMD this time and their 9800X3D since it's what is best for my type of use-case (gaming/flight sim) but I've never had an AMD build before.

Here's what I'm considering:
Which comes around 1500$ without the power supply.
I already own a Corsair RM850x 850W 80+ Gold (I've had it for 2.5 years) not sure whether I need to upgrade it, especially if I get a 5090 down the road.

As I said I could go higher in terms of budget if it's worth it.

What do you think of this? I'm especially unsure of the motherboard and the cooler since it's been a while since I last dove into it . I went with a white build but I don't really care about the overall look (white/grey/black).
