Question HELP - I need some help with picking the right RAM

My build came with an ASRock B360M IB-R1 board and it only came with a single channel 8GB ddr4 2666MHz ram stick. It was - well, enough, but I knew I was gonna have to upgrade one day.

So, my question is, where do I start? When buying new ram, what are things to look out for? What compatibility issues could I run into but easily avoid? Should I go ahead and buy 4x8gb sticks or should 2x8gb be enough? This is my first upgrade so anything helps!
 
Download and run CPU-Z and go to the SPD tab. It will give you the exact specs of your RAM. Then just buy a 2nd 8GB stick of RAM to match the one you already have.

Well, that was another problem I was having, I can't find the version of the ram online that came with my pc. I think its some Chinese pos ram stick that IbuyPower just stuck in there to cut costs.
