Should I have buyer's remorse, or did I do okay? Sad to see my i7-870 with a 2GB Radeon GPU go! Well, not really, but it earned its keep!

Weakest component would be this:
SUPER FLOWER SF750 COMBAT FM 80+G AXT3
Just because it is Super Flower, doesn't instantly mean it is good. That PSU (Combat series), is almost the poorest option (even worse would be Zillion), that you can currently get from Super Flower. And your FG-series is mediocre quality, borderline low quality.

For 2nd opinion about your PSU, look it up from PSU Tier list,

You'll find it to be Tier B-.
While for a good PSU, i suggest anything from Tier A, like: Seasonic Focus/Vertex/PRIME, Corsair RMx/RMi/HXi/AXi, Super Flower Leadex Gold/Platinum/Titanium.
Tier A- will do too, while Tier A+ is preferred.

(My 3x PCs are also powered by Seasonic. I have PRIME 650 Titanium (Tier A+), PRIME Ultra 650 Titanium (Tier A+) and Focus PX-550 (Tier A) units. Full specs with pics in my sig.)

Other than the PSU, rest is good/great.
 
I would not have bought a 14th gen chip. Not convinced their so called fixes have fixed anything, with regards to chip degradation. Also 0 upgrade path. I would have went AM5.

I would make sure you update to the latest bios, to get the latest microcode updates, for the degradation problem, and set the bios to Intel defaults.

I have yet to plug anything into the PSU so I may just pack it up and exchange. I was thinking a be quiet 850 so I'll go look at the tier list. Thanks!
