Question How do I wipe an old server?

A friend of a friend worked security for a company that went out of business and bought their servers. I got one of them, a Dell Poweredge r710 with one Intel Xeon E5530. I was able to boot it up and to find it has Citrix XenServer on it but everything is password protected. I want to wipe it and install a new OS but I've never done that before. I tried googling it but all I see is Minecraft and Plex server tutorials. Any help would be appreciated.

I'm still a student for IT Networking so I may ask follow up questions.

Is the BIOS protected?

If you can change the machine to boot from USB, you may be able to boot into software that can wipe the drives.

The BIOS is not locked and I can choose to boot from either the C drive or SATA optical drive. The RAID is password protected though. If I install from a disk will that unlock the RAID and erase anything on those drives as well?
