If I'm playing a game and only using up to 80% of my RAM, how will increasing my total RAM boost performance whatsoever?

Is it because of less page file being utilized? Do programs just perform better when there is more free RAM available that isn't even being used?

It won't.
RAM that isn't being used is just sitting there, unused.

But...you seem to have only a single 8GB stick. You're leaving performance on the table.
2x 8GB will run in dual channel, giving a reasonable boost.

So how will this "boost" help if it's just giving me more RAM that my game won't probably use? Dual channel just is better somehow?
