How hard is it to change cpu coolers

How risky is it? Will I probably bend pins?

It's not risky if you do a little research and follow the instructions included with the CPU cooler. You don't even have to take the CPU out of the socket, so bent pins shouldn't be a concern. You will need to clean off the old thermal paste and apply new paste, though.

For your build, b4 I SLI or over-clock do i need a better cpp cooler or should I use the stock one with paste already provided
And wouldn't you have to take it out to clean it?

The Cooler Master Hyper 212 EVO in that build is an aftermarket CPU cooler that will allow overclocking. You would install it when building the system. You just won't use the stock Intel CPU cooler. The Cooler Master Hyper 212 EVO comes with a tube of thermal paste.

Im Nervous that I will damage the cpu in the process By applying the thermal paste wrong ... with the stock I wouldn't have too apply paste

There's no more risk in installing an aftermarket cooler than there is installing the stock cooler. Follow the instructions and do some Google searches until you feel comfortable and you'll be good to go. There are a number of installation instructions for thermal paste available online if you do a Google search for the cooler you are installing. Here's one that I liked enough to include in the troubleshooting checklist in the stickies at the top of the forum.
