I am planning on building a PC in the future, and I plan to have an SSD to improve the startup/loading times. If I want about 5-7 games and not many other apps, is 250 GB enough, or should I upgrade to a 500 GB or more ?
I would advise a 500GB, the games amount isn't as important as the size they take up. If you fill up an,SSD it hurts performance. Try to keep it at 80% or less if you can

Depends on the games. Newer games easily reach 50-70GB especially with DLC. I'd get 500GB minimum and think about 1TB. SSD prices continue to drop and will likely drop even more in coming weeks/months.

With a 250GB drive, "a lot" is when you reach 200GB.
Doesn't matter how many games that takes. Might be 2, might be 10.
If this is to be the only drive, strongly suggest you get a larger drive.
Samsung is best 860 evo
Crucial mx500 and Western Digital Black are very good also.
Kingston SA400, Team L5 Lite and ADATA ASU800 are decent cheaper options.
