I built my rig in 2020 and I am looking to upgrade the GPU from an RTX 2070 Super.
CPU is a Ryzen 9 3900X....any ideas, opinions on what to go with? Looking to spend 600 or less.

For which games/resolution ? Any latest GPU for $600 would be many times better than Rtx 2070 but you nay need more power than what your PSU provides so you may have to count PSU in the price. GPU prices are all over the place so it depends where you are and availability.

1440, fps mostly....
 
Depending, you could go the route of a 9060xt 16gb or 5060ti 16gb which should leave close to a couple hundred in the budget, then pick up a 5700x3d as a final upgrade to your board if your board supports it. If memory serves, those cards are close to a 6800xt for raw performance which is great considering their pricing, but of course better upscaling and frame generation.

I feel the only issue with the 5060ti is that if you are on a b450 board with PCIE GEN 3 you will be limited to an x8 interface. B550 and PCIE 4 then no significant concerns. 9060xt no concerns.

Fully agree on a 5700x3d if possible as uplift and general system balance would be better.

PSU and current RAM speed however need to be clarified i feel
