So I can have i7 7800x delid and 4.8ghz for 320euros. And I can get i7 8700k for 370euros. If I get i7 8700k I will buy 250euros motherboard and same with 7800x. 7800x voltage is 1.275v. Which one should I pick?

If you need 2 graphic cards in sli i would go for a bit older generation, the 6850K which has 40 pcie lanes, this can run 2 gpus at 16x and 8 lanes to spare, also has quad channel memory. All this depends on your workloads (for what the pc is used). For gaming and a single videocard 8700K is more recommended.
This depends on what you are going to use them for.

If you require a lot of PCIe lanes then the i7-7800x will be better as it has 12 more PCIe lanes available.

If clock speed is more important then the i7-8700k be better, as it has a Boost clock which is much higher than that of its counter part.

They will be very similiar.. Only difference that will probably affect gaming performance is the cache hierarchy.. the 7800x will Probably be 5% slower at most in some games at same clocks. But the difference is minimal. Go with whatever is cheapest, and if the 7800X is already delidded u could probably hit 5ghz quite easily with proper cooling.
