As the title states, I was curious if the 9700k was as much of a value as the 8700k. The 8700k obviously has 6C/12T, and the 9700k has 8C/8T, but the 8700k has a slightly higher clock speed (0.1GHz higher).

Are the extra threads and clock speed of the 8700k better, or for more expense, are the 9700k's cores more important for gaming?

Any help with this is very much appreciated!

TBH, clock speeds are negligible on K series since you can overclock them (and then you're at the mercy of silicon lottery if u got a good or so-so chip).

Gaming is, mostly, based on single core speed (since not many games fully utilize multiple cores). Hence, Intel is preferred over AMD for gaming (and AMD is preferred for editing 3D models, rendering, etc) since single core speeds beat more cores typically.

In gaming, both would likely have a minimal difference that would come down to the single thread speeds (and you could easily bring the 8700k up to the 9700k's speeds with a bit of OCing).

Google/YouTube gaming comparisons between them for more solid answers.

All in all, it's a very small difference.

So not worth the extra $60 or whatever it is and my time trying to find a 9700k that is in stock? I'm thinking I'll just go with an 8700k then since it seems to be the better all-around and value chip.

The difference on newegg is $30 right now.

Be careful picking out a motherboard. A number of people on the forum have received boards with early versions of the BIOS that didn't support the newer coffee lake CPUs. They ended up having to pay to get their BIOS flashed to a newer version.
