Ignorant to GPU

I am looking at buying a new rig (custom built). It will be a true multi-use system with the I7-920 for the processor. I will use it as the main system for my small business, home computing, video editing, photo editing and some gaming, mostly BF2. The GPU always kills me since they can be SOOO expensive and there are so many out there.

#1 what is the best way to go? 1 card or use the SLI/Crossfire with 2 less expensive cards?

#2 I realize there are a ton of options out there but what are some suggestions for a card/cards that won't be over kill but will do a nice job.

 
I say away from SLI/CF, as it stresses the PSU and you get uneven results. Stick with one decent card and you'll be fine.

Cheap:
NVIDIA 9600GT
ATI 4670

Mid-Range:
ATI 4850
NVIDIA 260 (216)

High End:
NVIDIA 275
ATI 4870

Extreme:
NVIDIA 295
ATI 4870X2

Best all around option would be the ATI 4850 for around $120 (or less), which is a steal at that price. Anything more is really only meant for gamers anyway.
