Input on new system

I'm going to build a computer. Use it for small business, light video editing (HD backup/edit), and web browsing.

What I had in mind is as follows (been a while for me to build a new system). I am mainly going for VALUE, but I do want a system that will last a while. I have listed price or price range.

Processor: i7 2600k $310 (going to overclock it)
Motherboard: ASRock p67 extreme 6 or ASUS p8p67 deluxe $220 (want good MB for overclocking)
Graphics: SLI gtx 460s-470s $200-250 (want HD video editing, but VALUE)
RAM: 16gb cheapest I can find
CPU cooler: Scythe Ninja 3 $40 (also like thermalright hr-02 macho, but not available yet)
Power supply: COOLER MASTER Silent Pro RSA00-AMBAJ3-US 1000W $135
Case: Azza Hurrican 2000 $100ish
HDD: hitachi deskstar 7k3000 1.5tb $69 (will add SSD in future and make this storage)
DVD: blu-ray burner 12x combo drive $80
OS: windows 7

I may have forgotten something, if so please let me know. Please give me some feedback on my choices and options. Thanks.

In regards to the MB. Wouldn't I want two PCIe slots at x16? I thought the two I had selected were, but now that I look closer it seems like they are not. Seems like only top of the line boards have two slots of x16. Or is the x8 vs x16 not much difference. The graphics cards are x16. This has changed dramatically since the last time I built a computer, I think I have one AGP 8x card... lol. Need to do some research.

I was thinking that PSU was overkill, but put my system into a load tester and it was saying 1000...

so I see x16/x16, x16/x8, and even x8/x8 don't make much difference unless multiple displays... I have one 32" and plan on keeping it. I am not going to multi-displays ever, but could potentially use the system on a larger screen...
