dunno why u're not considering Ryzen since it's really bang in the buck, but i'll respect ur thoughts

yeah, the GPU can easily give u 144 fps on 1080p without a hassle, but CPU will be the limiting factor here (and i mean really limiting, there's news that even i5 7600k can give some bottleneck to the 1080ti)
ur mobo already supports OC, why stick with a locked CPU anyway? get a K-version CPU, preferably i7

if you're only gaming on 1080p and only e-sport titles, better get a i7 7700k + 1070 instead (since changing a GPU later on is easier)

suggestion: cap ur fps, 1080ti is an overkill for 1080p gaming

A 1080Ti is WAY overkill for Overwatch and Rocket League at 1080p. A 1070 would certainly deliver you 144fps.

With that taken in mind what do you think about this https://uk.pcpartpicker.com/list/DFPyPs

that's decent enough, though your mobo might doesn't have gaming feature like the gaming series MSI had, it's already more than enough

u shouldn't get any problem unless u're playing on 4k later on, but remember though, the fps is high, but might not as stable as Ryzen's (Ryzen had lower fps range but it's more stable coz of more cores)

If i was to get a Ryzen cpu which one should i get and which are overclockable?

All Ryzen CPU's are overclockable.

Oh, ok well which should i get to pair with the gtx 1070 and which motherboard?

the one that i most likely suggest u to get should be the R7 1700, it had 8 core/ 16 threads, OCable, comes with a free stock cooler
