Question Mesh or Gaming Router?

3500sqft home, 2 story, having issues with cox panoramic wifi router.

So I'm going to get an Arris S33 for a modem:

Now I dont know if to go with a mesh system like Netgear Orbi AX4200:

Or a gaming router like the Asus ROG Rapture GT-AX11000:

I have current problems with the doorbell in front of the house and upstairs range.. I'm on Cox's Gigablast if that makes any difference and I'm wondering whats the better choice.

You may not like this answer -- NEITHER. Spending $600 for the Orbi or $400 for the Asus is not guaranteed to help your problems.
All newer routers transmit at maximum allowed power. So coverage for the base router won't be any better. The Orbi might be better if you place the satellites carefully.
You would be much better off by spending that $600 to have ethernet cable run so that your gaming PC can be wired. Then add a WIFI access point if you still need additional coverage.

Either one would run less than 400, everything I need hardwired would be hardwired at the router, but will the asus provide the extra range needed or will the mesh system do it better? I would still keep the router in the same location and hardwired

In my experience, NO, the Asus won't be guaranteed to have greater range.
I said $600 because the link you included to bestbuy was #600.
Mesh can have more WIFI coverage at the cost of lower throughput. Mesh is a fancy name for "WIFI repeater". So if you place the satellite say 1/2 the distance that you get usable WIFI then you can gain some extra coverage. So to get "upstairs" coverage, you might have to have the satellite at the top of the stairs, for example.

Do you have any ethernet cable between rooms in the house. Using AP or cheap router running as a AP on a ethernet cable is going to perform much better than any mesh system.

Running ethernet cables to 2 or 3 spots in the house, and using cheap accesss points will be better than spending $400 on a gaming router.

I would call around and get a quote on running ethernet in the house.

If you have coax cable tv outlets, you can also use MOCA adapters instead of running ethernet. It's just as fast ethernet.

For a 3,500sqft house, I don't think a a single wifi router can properly cover it. The amount of antennae sticking out of the thing doesn't matter, that won't increase range. It just adds more wifi radios to use for better bandwidth with the range you do have.
