Will getting 8gb more of this stuff mess with the stability of the system?

The frequency don't match for what you have and what you are planning to buy so I don't believe they would be stable.

Usually you will simply run at the lower clock speed of the chips that are in the system, and while it MAY work, I HIGHLY suggest using identical matched sets of memory. you are buying 2 identical kits, the likelyhood of stability problems drops considerably.
