Hello, not entirely sure this it the right section..

I want the be entirely sure,
will the on-board sound of an ASUS P8Z68-V PRO/Gen3 support an Logitech X-530 5.1 speaker set?

And if it does (Which I think it will) will the sound quality be good enough,
I'll be using it for games, movies and music.

Yes it will , the onboard sound has come a long way and unless you are very demanding with your sound reproduction you can use the onboard sound chip. While it might not support 7.1 it will support 5.1 and that board has Asus Crystal Sound which you can read about in this link;
