Multiple displays on my new PC?

Hi all, after years of counsel gaming and Macbook web-surfing, I've recently acquired the funds to build a PC. I plan on doing a lot of gaming, but also some HD video/photo editing (amateur photographer).

I'd really like to run a multiple display setup (dual probably, maybe triple). I don't plan on gaming on multiple screens, but gaming on 1 screen (on max/ultra), and using the other screen for web browsing, photo editing, Skype, etc.

I purchased a EVGA GeForce GTX 780, which is 3GB and has multiple connectors. I also have 32GB of RAM. I guess I'd like to know any limitations I'd have as far as running multiple displays on max settings, and any other considerations. For displays, I've been looking at a UltraSharp U2913WM and Asus VS248H-P, but haven't made a decision yet.

I appreciate the help, and I apologize if my question is nooby or poorly researched.
 
If you're going to be doing any photo or video editing on more than one display just make sure you get the same model so that there is no difference from one display to another. It's no a big deal/very noticeable if you are only going to do one thing on each display (as in game on disp. #1, photos on #2, web on #3 etc....)
